Courtney, also known as Coco, has worked at Tara for over 12 years, preparing breakfast and lunch for the guests that come throughout the year including those that are attending workshops and meetings, our summer campers, and hunters.
Courtney really enjoys working with the staff at Tara and interacting with the guests. Her warm, friendly nature and world-class Southern cooking make our guests feel right at home.
As the saying goes, the best way to someone’s heart is through his/her stomach. Our guests can attest to that – they love the breakfasts and lunches that Courtney prepares for them.

Southern Food Favorites
The Southern style food at Tara is a favorite of our guests. Those that frequently visit Tara clearly have their favorite dishes.
At breakfast, Courtney says her grits are everyone’s favorite dish. If you ask our guests, she makes the best grits in the world. Other breakfast standards include biscuits and gravy, eggs, sausage, and bacon.
At lunch, the large hamburgers are a favorite and many of our guests request them for their visit. It’s the way that Courtney prepares the burgers that makes them special. She cooks the patties on a grill until nearly done and then they are finished off in the oven. Cooking them this way gives them a meatloaf-like taste and texture – a unique specialty at Tara – Coco’s burgers!
About Courtney
Courtney loves animals and has adopted two dogs and two cats. Sweetie, her 8.5-year-old Chihuahua, was adopted from the Humane Society and spends most of her time indoors. Safe, her 3-year-old Red Heeler, is very loyal and protective of Courtney. Safe had an accident with a car a few years ago and lost his tail and part of his front arm, but he still gets around well and enjoys life.
Her two cats, Molly and Man, were adopted 7 and 2 years ago, respectively. Molly just showed up at the house one day and adopted Courtney, whereas Man was rescued from a dumpster to become part of the family.
